“Nephrops norvegicus”

Otherwise known as Norwegian lobsters, Dublin Bay prawns, langoustines or scampi, an estimated 10 billion prawns live in the deep cold waters around the UK, with about 75% of these found off Scotland.

Prawn breeding grounds are limited by the extent of suitable muddy sediment in which they construct burrows. Prawns find the waters to the west of Scotland very attractive and populations are found in depths as shallow as a few metres in sheltered sea lochs, down to over 500 metres on the shelf edge west of the Hebrides.

Although larger prawns can be sold whole or as shell-on tails, there appears to be little appetite for this in the UK and most large prawns are exported. However, smaller prawns are peeled and the tail meat covered in crispy breadcrumbs to make scampi, which is a UK favourite.
